Chickpea Chocolate Cake

Ingredients

1 ¼ c semi-sweet chocolate

1 can garbanzo beans

4 eggs

½ c granulated sugar

½ t baking powder

 

Directions:

  • Preheat oven to 350, grease round cake pan
  • Melt chocolate slowly on the stove. Best practice is to place the Pyrex bowl in a shallow water bath in a sauté pan. Add chips to bowl, heat water to just below boiling. Stir chocolate as it softens
  • Drain and rinse beans. Combine beans and eggs in a food processor or blender. Process until smooth
  • Add sugar and baking soda. Pulse to blend
  • Add chocolate, blend until smooth and fully combined
  • Pour batter into a cake pan. Bake on 350 for 35-38 minutes or until a toothpick inserted into the center comes out clean. Let cool for 10-15 minutes
  • Optional: dust with confectioner’s sugar, coconut shavings, berries, etc.
